Edamame Cookie Cutter Snacks

Ingredients

6-10 slices whole grain bread
1 10oz container Lantana® Edamame Hummus
1 C micro greens
1 C alfalfa sprouts
1 C matchstick carrots
1 C sliced black olives
1 package Wilton Candy Eyeballs
½ red bell pepper, cored and seeded (can be cut to make noses, ears, etc.)
½ yellow bell pepper, cored and seeded (can be cut to make noses, ears, etc.)
3 slices orange cheddar cheese (can be cut to make noses, ears, bellies, wings, etc.)
3 slices red cheddar cheese (can be cut to make noses, ears, bellies, wings, etc.)
3 red radishes (can be cut to make noses)

Supplies:
Cookie cutters (we like woodland creatures, but any shape will work)


Instructions

Cut bread into desired shapes using cookie cutters. Discard crusts.
Generously spread each shape with Edamame Hummus
Decorate as desired using veggies, cheese, and eyeballs
